Today I am adding to our Recipes from Puglia collection a recipe taught to me by my friend Mino, Fagiolini con pomodori.
Fagolini are green beans, small and tender, akin to french beans. If I am honest am not a fan of beans, not much of a fan of green vegetables at all. I have to make myself eat green veg from time to time.
That all changed when I had lunch with, now retired chef, Mino and his wife Val, a few weeks ago. Mino served as part of the Antipasti his Fagolini. I loved them.

Ingredients
- 500gm fagiolini or french beans if you are not in Italy!
- olive oil
- 2 or 3 medium tomatoes, deseeded and coarsely chopped
- 1 garlic clove finely sliced
- ½ a stock cube
Method
Top and tail the beans. Add to a pan of boiling water and cook until soft.
Drain the beans, reserving two tablespoons of the water.
Add a splash olive oil to a frying pan. Add the tomatoes and finely sliced garlic. Cook for a few minutes.
Add the beans, ½ a stock cube and the reserved bean water. Cook for a few minutes more.
